Dum keema comes from the Muhajir kitchens of Karachi, where mince is treated like a kabab: it is marinated with yogurt, crushed fried onion and a lot of spice, then cooked slowly on dum until tender and dry. A piece of hot charcoal with a drop of ghee, sealed in the pot for a few minutes at the end, gives it the smoky taste it is known for. It is a dawat dish, made very often with Eid mince.

Dum Keema: questions people ask

How do I give keema a smoky charcoal flavour?

Heat a small lump of charcoal until glowing, place it in foil or a steel bowl on top of the cooked keema, pour a teaspoon of ghee on it and seal the lid for 5 minutes.

What is the difference between dum keema and normal keema?

Normal keema is fried with onion and tomato in the pan. Dum keema is marinated first with yogurt and fried onion, cooked slowly under a lid and usually smoked, so it is softer and more kabab-like.
