Nihari came to Pakistan with the cooks of old Delhi and became the breakfast of Karachi and Lahore: beef shank simmered for hours until it falls apart, in a spiced shorba thickened with flour. The flavour comes from a freshly ground masala heavy on fennel, black cardamom and pepper, and the body comes from marrow bones and shank collagen. Cook it the night before or start it early; it only needs time, not attention.

Method
Dry-roast all the nihari masala spices in a pan on low heat until fragrant, then cool and grind to a fine powder.
⏱ 4 min
Heat the ghee in a large heavy pot on medium heat. Fry the ginger-garlic paste for a minute, then add the shank and marrow bones and sear, turning, until the meat changes colour all over.
⏱ 10 min
Add the salt, red chilli powder, Kashmiri chilli, turmeric and half the ground nihari masala. Bhuno for a few minutes with a splash of water so the spices cook without burning.
⏱ 5 min
Pour in the 10 cups of water and bring to a boil. Skim off any grey scum, then cover tightly and cook on the lowest heat until the meat is very tender and comes off the bone with a spoon. Check the water now and then; add hot water if it drops below the meat.
⏱ 270 min
Whisk the atta into 1.5 cups of water until completely smooth, then strain it so no lumps go in.
Pour the flour water into the pot in a thin stream, stirring all the time. Add the rest of the nihari masala and cook uncovered on low heat, stirring now and then, until the shorba thickens, turns glossy and loses its raw flour taste.
⏱ 30 min
For the tarka, heat the ghee in a small pan and fry the sliced onion until deep golden. Take off the heat, stir in the Kashmiri chilli and pour it all over the nihari.
⏱ 8 min
Ladle into bowls with a piece of meat and marrow in each. Top with ginger matchsticks, green chillies and coriander, and squeeze lemon over at the table.
Tips for the best result
- Shank (nalli ka gosht) is the right cut: its collagen melts into the shorba. Lean boneless beef turns stringy and dry.
- Many families add 1 tsp of dry ginger powder (saunth) and a pinch of long pepper to the masala. If you have them, add them; they give the classic old-Delhi warmth.
- Some cooks skim the red oil (tari) off the top before thickening and pour it back over each bowl at the end. It looks better and lets each person choose how rich they want it.
Common mistakes
- Rushing it on high heat. Boiled hard, shank seizes and stays tough; it needs a bare simmer for hours.
- Dumping the flour water in all at once. It sets into lumps; pour slowly while stirring.
- Using old, shop-bought ground masala. Nihari lives on its spice blend; roast and grind it fresh.
How to serve
Serve very hot with fresh naan or khameeri roti, with the ginger, chillies, coriander and lemon on the side so everyone can garnish their own.
Storing and reheating
Keeps 3 days in the fridge and 2 months in the freezer. It sets firm when cold; reheat gently with a little hot water, stirring.

Beef Nihari: questions people ask
Can I make nihari in a pressure cooker?
Yes. After adding the water, pressure cook for about 45–50 minutes, release, then thicken with the flour water on the stove as normal. The texture is good, though slow cooking gives a deeper flavour.
Why is my nihari shorba thin?
Either there was too much water left or it was not cooked long enough after the flour went in. Simmer uncovered for another 10–15 minutes, or add a little more flour water slowly.
