Haleem is wheat, barley and lentils cooked with meat until the two melt into one thick, stretchy porridge. It is made in big pots for Muharram, Ramadan and family gatherings, and the hard work is the ghotai: beating it with a wooden ghotna until the meat fibres pull through the grains like strings. Soak the grains overnight, cook the meat and grains separately, then bring them together.

Method
Wash the daliya, barley, daals and rice together until the water runs clearer, then soak them overnight in plenty of water.
⏱ 480 min
Drain the grains and put them in a large pot with the 10 cups of water, turmeric and salt. Bring to a boil, then cook covered on low heat, stirring now and then, until completely soft and mushy. Add hot water if it gets too thick.
⏱ 90 min
Meanwhile, heat the oil in another heavy pot and fry the sliced onions until golden. Add the ginger-garlic paste and beef and bhuno on medium-high heat until the meat is browned.
⏱ 15 min
Add the salt, red chilli, turmeric, coriander powder, garam masala and yogurt, and bhuno until the oil separates. Add the 5 cups of water, cover and cook on low heat until the beef falls apart when pressed.
⏱ 120 min
Lift the meat out of its masala and shred it with two forks, or pound it lightly. Blend or mash the cooked grains until mostly smooth.
Return the shredded meat to its masala, then add the grain mixture. Cook on low heat and beat hard with a ghotna or wooden spoon, scraping the bottom, until the meat and grains melt together and the haleem pulls into strings when lifted.
⏱ 30 min
Taste for salt and adjust the thickness with hot water: it should fall slowly from a spoon. Stir in the garam masala.
⏱ 5 min
Serve in bowls with fried onions and a spoon of their oil on top, then ginger, green chillies, mint, coriander, chaat masala and lemon.
Tips for the best result
- Use beef with some fat and connective tissue, such as chuck or shank. Very lean meat will not shred into long fibres.
- The wheat is what makes haleem stretchy. Do not cut the daliya to add more daal.
- A pressure cooker saves hours: grains about 30 minutes, beef about 40 minutes. The ghotai still has to be done by hand.
Common mistakes
- Blending the meat in a food processor. It turns into paste and you lose the strings; shred it instead.
- Not stirring the grains. Daal and wheat stick and burn easily on the bottom; scrape the pot every few minutes.
How to serve
Serve hot with all the garnishes on the table, and naan on the side.
Storing and reheating
Keeps 3 days in the fridge and 2 months in the freezer (without garnishes). It thickens a lot; reheat with hot water, stirring well.

Beef Haleem: questions people ask
Why is my haleem not stretchy?
Usually there was too little wheat, the grains were not fully cooked, or it was not beaten long enough after mixing. Keep beating on low heat for another 15–20 minutes and it will start to pull.
Can I make haleem with chicken or mutton?
Yes. Use boneless chicken thighs (cook about 40 minutes) or boneless mutton (about 90 minutes); the rest of the method stays the same.
Do I have to soak the grains overnight?
Soak for at least 4 hours. Overnight soaking cuts the cooking time and helps the wheat break down properly.
