Bharta means mashed, and this Punjabi favourite is all about the smoke. Large round aubergines are charred whole over an open flame until the skin blisters and the flesh collapses, then mashed and fried with plenty of onion, tomato and green chilli. The burnt skin is peeled off, but its smoky flavour stays in the flesh and is what makes the dish.

Baingan Bharta: questions people ask

Can I make baingan bharta in the oven?

Yes. Roast the pricked aubergines at 220°C for 40 to 45 minutes, turning once, until collapsed. You lose some smoke, so use the coal trick at the end.

Do you add yogurt to bharta?

Some families stir in 2 or 3 tablespoons of beaten yogurt at the end for a creamier, tangier bharta. The plain onion-tomato version is the more common one.
