Aloo baingan is a dependable everyday sabzi: cheap, quick and filling. The aubergine half melts into the masala and makes it rich, while the potatoes stay in neat pieces. A little fennel and kalonji in the oil gives it a pleasant pickle-like note that many Punjabi and Karachi homes add.

Aloo Baingan: questions people ask

Should I peel the aubergine for aloo baingan?

No. The skin helps the pieces hold together. Only peel large, tough-skinned aubergines.

Why does my aubergine taste bitter?

Old, seedy aubergines can be bitter. Choose firm, shiny ones, or salt the cut pieces for 15 minutes and rinse before cooking.
