This is the biryani most Pakistani homes make for guests and Eid: a spicy, slightly sour chicken masala layered with part-boiled basmati and steamed together under a sealed lid. The sourness comes from yogurt, tomatoes and dried plums, the aroma from fried onion, mint and kewra. Get the rice to the right point before layering and the rest is patience.

Method
Wash the rice in several changes of water until it runs nearly clear, then soak it in fresh water.
⏱ 30 min
Heat the oil in a heavy, wide pot on medium heat and fry the sliced onions, stirring often, until deep golden brown. Lift out about half with a slotted spoon and spread on a plate to crisp; this is for layering.
⏱ 12 min
Add the cloves, cardamom, cinnamon and peppercorns to the remaining onion and oil. After 30 seconds add the chicken and ginger-garlic paste and fry on high heat until the chicken turns white.
⏱ 6 min
Add the tomatoes, salt, red chilli powder, turmeric, coriander powder and garam masala. Cook on medium heat, stirring, until the tomatoes break down.
⏱ 8 min
Stir in the yogurt, green chillies, dried plums and potatoes if using. Cover and cook on medium-low heat until the chicken and potatoes are tender, then uncover and cook until the oil separates and the masala is thick, not watery.
⏱ 20 min
Meanwhile bring the water to a rolling boil in a large pot with the salt, bay leaves and shahi zeera. Drain the rice, add it and boil uncovered until the grains are long and about three-quarters done: a grain pressed between your fingers should break with a small hard core. Drain at once.
⏱ 6 min
Lift out half the chicken masala. Spread half the rice over the masala left in the pot, then the reserved masala, then the mint, coriander, half the fried onions and the lemon slices. Top with the rest of the rice and the remaining fried onions.
Mix the food colour into the milk and drizzle it over the rice in streaks, then sprinkle the kewra and pour over the ghee if using. Do not stir.
Cover tightly (wrap the lid in a cloth or seal with foil). Keep on high heat for 2 minutes until steam builds, then put a tawa under the pot and leave on the lowest heat for dum.
⏱ 20 min
Turn off the heat and leave it closed for 5 minutes. Serve by lifting from the sides with a flat spoon so the layers and colours show.

Tips for the best result
- Use aged long-grain basmati. New-crop rice breaks and turns sticky however carefully you boil it.
- The masala should look a little too salty and sour on its own. The plain rice will soak it up during dum.
- Potatoes are the Karachi way and most Pakistani homes add them. If you skip them, cut the cooking time in step 5 by a few minutes.
Common mistakes
- Boiling the rice fully. It keeps cooking in the steam, so fully boiled rice turns mushy on dum.
- Layering over a watery masala. Excess liquid boils up into the rice and makes the bottom layer soggy; cook the masala down until the oil shows first.
- Skipping the tawa under the pot. Direct flame for 20 minutes burns the masala at the bottom before the rice is done.
How to serve
Serve with raita and kachumar salad. For a dawat, add shami kababs and a sweet like zarda or firni.
Storing and reheating
Keeps 2 days in the fridge and up to a month in the freezer. Reheat covered on low heat with a sprinkle of water, or in the microwave under a damp paper towel.

Chicken Biryani: questions people ask
Why is my biryani rice sticky?
Usually the rice was boiled too long, not washed well, or was new-crop rice. Wash until the water is nearly clear, boil only to three-quarters and drain straight away.
How much rice do I need for 1 kg chicken biryani?
About 750 g to 1 kg of basmati (4 to 5 cups). Use the lower amount if you like more masala in every bite.
Can I make biryani without food colour?
Yes. Soak a pinch of saffron in warm milk for 10 minutes and use it instead, or leave the rice plain; the colour is only for looks.
