Yakhni pulao is the gentler, more aromatic alternative to biryani. Chicken is simmered with onion, garlic, ginger and a bundle of whole spices to make a strong stock (yakhni), and the rice is then cooked in exactly the right amount of that stock so it absorbs all of it. It is not meant to be spicy: the flavour comes from fennel, coriander seeds and a properly browned onion.
Ingredients
For 5 servings
For the yakhni (stock)
For the pulao
Method
Wash the rice until the water runs nearly clear and soak it.
⏱ 30 min
Tie the fennel, coriander seeds, peppercorns, black cardamom and star anise in a square of muslin (a potli). Put it in a pot with the chicken, water, halved onion, garlic, ginger and salt.
Bring to a boil, skim off the grey foam, then simmer partly covered on low heat until the chicken is tender. Lift out the chicken, strain the stock and discard the potli and aromatics. Measure the stock: you need 5 cups; top up with water or boil down.
⏱ 35 min
In a heavy pot heat the oil and fry the sliced onions on medium heat until an even golden brown. This colour is what colours the pulao, so take it far enough but do not burn it.
⏱ 12 min
Add the cumin, cloves, cardamom, cinnamon and bay leaves and stir for 30 seconds. Add the ginger-garlic paste and the boiled chicken and fry for 2 to 3 minutes, then add the yogurt and bhuno until the oil separates.
⏱ 5 min
Pour in the 5 cups of hot stock, add the green chillies, salt and garam masala and bring to a boil. Taste: it should be a little saltier than soup.
Add the drained rice and cook uncovered on high heat, stirring once or twice gently, until the stock drops to the level of the rice and small holes appear on the surface.
⏱ 8 min
Cover tightly, put a tawa under the pot and cook on the lowest heat for dum until the rice is fully done and dry.
⏱ 15 min
Rest 5 minutes, then fluff gently with a fork or flat spoon and serve.

Tips for the best result
- The ratio matters more than anything: about 1 2/3 cups of stock for each cup of soaked basmati. Measure the stock, do not guess.
- The yakhni can be made a day ahead and kept in the fridge; the fat that sets on top can go into the pulao instead of some of the oil.
- For a whiter pulao, fry the onion only to light gold. For the brown Peshawari look, take it darker.
Common mistakes
- Using unmeasured stock. Too much makes the pulao mushy; too little leaves hard grains that no amount of dum will fix.
- Stirring the rice once it is on dum. It breaks the grains and releases starch; leave the lid on.
How to serve
Serve with raita and kachumar salad, or with shami kababs for guests.
Storing and reheating
Keeps 2 days in the fridge and a month in the freezer. Reheat covered on low heat with a sprinkle of water.

Chicken Yakhni Pulao: questions people ask
What is the difference between pulao and biryani?
In pulao the rice is cooked once, in a measured amount of meat stock, and is mild. In biryani the rice is boiled separately, layered with a spicy masala and finished on dum.
Why is my yakhni pulao mushy?
Usually too much stock or rice that was not soaked and washed well. Stick to about 1 2/3 cups of stock per cup of soaked rice and do not stir during dum.
