Chana daal is the heartiest of the everyday daals, nutty and thick enough to scoop with roti. Unlike masoor, it holds its shape, so the best versions keep most grains whole and mash just a few to thicken the gravy. Soaking is not optional here; it cuts the cooking time in half and makes the daal easier to digest.

Daal Chana: questions people ask

How long should I soak chana daal?

At least 2 hours, and up to overnight in the fridge. Longer soaking means shorter cooking.

Why is my chana daal still hard after an hour?

Old daal, hard water or adding tomato too early can stop it softening. Cook the daal in plain water first and add tomato only in the masala.
