Daal makhani is the rich Punjabi daal of whole black urad and a handful of red kidney beans, simmered until the lentils start to melt into their own creamy sauce. There are no shortcuts to the texture: it needs an overnight soak and long, slow cooking with regular stirring. Butter and cream go in at the end, and a piece of hot coal gives it the smoky dhaba finish.

Method
Wash the urad and kidney beans together, rubbing them between your hands, until the water is less murky. Soak overnight in plenty of water.
⏱ 480 min
Drain, then boil hard with 6 cups of fresh water, the salt and the crushed ginger for 10 minutes, skimming the froth. The fast boil is important for the kidney beans.
⏱ 10 min
Lower the heat, cover and simmer until both the urad and the beans crush easily between your fingers. Top up with hot water whenever it looks dry. (In a pressure cooker: about 25 minutes after the first whistle on low heat.)
⏱ 75 min
Meanwhile melt the butter with the oil in a pan on medium heat, add the cumin, then the onion, and fry until golden. Add the ginger-garlic paste and fry for a minute.
⏱ 8 min
Add the tomato purée, both chilli powders and green chillies. Bhuno on medium heat until the masala is thick, darkened and the butter separates at the edges.
⏱ 10 min
Pour the masala into the cooked daal and mash about a quarter of the lentils with the back of a ladle. Simmer on the lowest heat, stirring every few minutes and scraping the bottom, until thick and creamy. Add hot water if it catches.
⏱ 30 min
Stir in the butter, cream, garam masala and kasuri methi and simmer for 5 more minutes.
⏱ 5 min
For the smoky finish, heat a small piece of charcoal on the flame until red hot. Set it in a small foil cup or onion skin on top of the daal, pour a few drops of oil or ghee on it and cover tightly for a few minutes, then remove the coal and serve.

Tips for the best result
- The longer it simmers after the masala goes in, the better. Restaurants keep it on the lowest heat for hours; even 45 minutes makes a clear difference.
- Use a heavy-bottomed pot. Urad is sticky and catches easily on a thin pan.
- Many Pakistani homes make it with only whole mash and no kidney beans; it is just as good.
Common mistakes
- Not cooking the kidney beans through. Undercooked red beans are hard to digest and can upset the stomach, so they must be fully soft.
- Adding the cream on high heat. It can split; keep the heat low once the cream goes in.
How to serve
Serve hot with a swirl of cream on top, with tawa naan or lachha paratha, sliced onion and kheera raita.
Storing and reheating
Keeps 3 days in the fridge and freezes well for a month. It tastes even better the next day; reheat slowly with a splash of water or milk.

Daal Makhani: questions people ask
Can I make daal makhani in a pressure cooker?
Yes. Cook the soaked lentils and beans for about 25 minutes on low after the first whistle, then simmer with the masala in an open pot for at least 30 minutes for the creamy texture.
Why is my daal makhani not creamy?
It has not cooked long enough. The creaminess comes from the urad breaking down over slow cooking and some mashing, not just from the cream.
