Maghaz masala is a much-loved Eid-ul-Adha dish in Pakistan, made from the brains of the qurbani goat and sold year-round at Lahore and Karachi food streets. Brain has a soft, creamy texture and a mild taste, so it is cooked in a well-fried, spicy masala that it soaks up as it breaks into chunks. The cleaning and quick poaching beforehand are what make it taste clean rather than strong.

Method
Soak the brains in cold water for 10 minutes, then gently peel off the thin outer membrane and red veins with your fingers. Rinse carefully.
⏱ 10 min
Bring the poaching water to a boil with the salt, turmeric and vinegar. Lower in the brains and simmer gently until firm. Drain and cut into large chunks.
⏱ 5 min
Heat the oil in a karahi on medium heat, add the cumin, then the onions, and fry until golden.
⏱ 8 min
Add the ginger-garlic paste and fry for a minute, then add the tomatoes, salt, red chilli powder, chilli flakes, turmeric and coriander powder.
⏱ 1 min
Add the yogurt and bhuno, stirring, until the tomatoes have melted and the oil separates.
⏱ 8 min
Add the brain chunks and fold them gently through the masala. Cook on low heat, turning now and then, so they soak up the masala; some will break, which is how it should be.
⏱ 7 min
Add the green chillies, ginger and garam masala, cover for 2 minutes on the lowest heat, then scatter the coriander and serve.

Tips for the best result
- For the tawa-style version sold at food streets, mash the brains completely into the masala with the back of a spatula and add a knob of butter.
- Brains are delicate; buy them on the day you cook and keep them in the fridge in water until use.
Common mistakes
- Skipping the membrane. It cooks up chewy and holds the strong smell people dislike.
- Boiling the brains hard. They break apart in the water; keep it at a gentle simmer.
How to serve
Serve hot with naan or roti and sliced onion with lemon.
Storing and reheating
Best eaten fresh. Keeps 1 day in the fridge; reheat gently. Do not freeze.

Maghaz Masala: questions people ask
How do I clean goat brain?
Soak it in cold water for 10 minutes so the membrane loosens, then peel it off with your fingertips along with any red veins and rinse gently.
Can I use beef brain instead of goat?
Yes. One beef brain equals about three goat brains; poach it a few minutes longer and cut it into smaller pieces.
