Imli chutney is the dark, sweet and sour sauce that goes over chana chaat, dahi baray, samosas and pakoras, and every home makes a jar before Ramadan. Tamarind is soaked and sieved, then simmered with jaggery and a few dates for body, and seasoned with roasted cumin, red chilli and black salt. Cooking it down until it coats a spoon gives a chutney that keeps for weeks.

Imli Chutney: questions people ask

Can I make imli chutney with sugar instead of gur?

Yes. Use about three-quarters of a cup of sugar; the colour will be lighter and the flavour less deep, so the dates matter more.
