No Ramadan table in Pakistan is complete without a plate of pakoras, and the everyday kind is made with sliced onions and potatoes bound in spiced gram flour. The trick is to salt the onions first so they release their own water, then add only enough extra water to make a thick coating. That keeps the pakoras light and crisp instead of doughy.
Ingredients
For 6 servings
Method
Put the onions and potatoes in a large bowl, add the salt, and rub them together with your hands. Leave them so the onions release their water.
⏱ 10 min
Add the besan, rice flour, red chilli, crushed coriander, ajwain, cumin, turmeric, green chillies, fresh coriander and spinach if using. Mix well; it will look dry at first.
Sprinkle in water a spoon at a time, mixing, until the besan just coats every slice and the mixture clumps together. Stop before it becomes a runny batter. Stir in the baking soda.
Heat the oil on medium-high. Test with a drop of batter: it should rise straight up with steady bubbles. Drop in loose, rough spoonfuls without pressing them flat.
Fry on medium heat, turning a few times, until deep golden and the bubbling around them slows down. Do not crowd the pan.
⏱ 5 min
Lift out onto a rack or paper, sprinkle with chaat masala while hot, and fry the rest in batches.
Tips for the best result
- Slice the potatoes paper-thin, or they will still be hard in the middle when the besan is done.
- A spoon of hot frying oil stirred into the batter just before frying makes the pakoras lighter.
- Mix the batter close to frying time. If it sits for an hour the onions keep leaking water and the batter turns thin.
Common mistakes
- Making a pouring batter as for bhajias. Pakoras soak up oil and go soft within minutes.
- Frying on high heat. The outside darkens while the inside stays raw and pasty.
How to serve
Serve hot at iftar with imli chutney, hari chutney or ketchup, alongside fruit chaat and a cold sharbat.
Storing and reheating
Best eaten fresh. Leftovers keep 2 days in the fridge; re-crisp in a hot oven or air fryer for 5 minutes rather than the microwave.

Aloo Pyaz Pakora: questions people ask
Why are my pakoras soft and oily?
The batter was too thin or the oil was not hot enough. Keep the mixture thick enough to clump, and fry at a steady medium heat.
Can I make pakoras without baking soda?
Yes. They will be a little denser but still crisp, especially if you add rice flour and a spoon of hot oil to the batter.
