Mutton biryani is the Eid-ul-Adha favourite, the best use for qurbani meat on the bone. The meat is marinated in yogurt, then cooked in its masala until fully tender before it ever meets the rice, because dum only finishes the dish, it does not cook raw meat. Shoulder and ribs give the juiciest result.

Method
Mix the mutton with all the marinade ingredients, cover and leave it. An hour is enough; overnight in the fridge is better.
⏱ 60 min
Wash the rice until the water runs nearly clear and soak it while the meat cooks. Soak the saffron in the warm milk.
Heat the oil in a heavy pot and fry the onions on medium heat until deep golden. Take out half for layering.
⏱ 12 min
Add the whole spices, then the marinated mutton. Bhuno on high heat, scraping the bottom, until the yogurt liquid dries and the meat changes colour.
⏱ 10 min
Add the tomatoes and fry until soft. Pour in the water, cover and cook on low heat until the mutton is tender and comes away from the bone. Top up with a little hot water if it dries out.
⏱ 60 min
Uncover, add the green chillies and dried plums and cook on medium heat until the masala is thick and the oil comes to the top. About a cup of thick gravy should remain.
⏱ 8 min
Bring the rice water to a rolling boil with the salt, shahi zeera and cardamom. Add the drained rice and boil until three-quarters done, then drain.
⏱ 6 min
Spread the rice over the mutton in two layers, scattering the mint, coriander and fried onion between them. Drizzle the saffron milk, kewra and ghee over the top.
Seal the lid tightly, give 2 minutes on high heat, then put a tawa under the pot and keep on the lowest heat for dum.
⏱ 20 min
Rest 5 minutes off the heat, then serve, digging down to the bottom so each plate gets meat and masala.
⏱ 5 min
Tips for the best result
- In a pressure cooker the mutton is tender in about 20 minutes after the whistle. Open, dry the masala, and continue from step 6.
- Fresh qurbani meat can be tough for the first day. Rest it in the fridge for 24 hours before making biryani if you can.
- A tablespoon of raw papaya paste in the marinade softens tough meat, but leave it no longer than an hour or the meat turns mushy.
Common mistakes
- Layering before the meat is fully tender. Twenty minutes of dum will not soften undercooked mutton.
- Leaving too much gravy. More than a cup of liquid under the rice turns the bottom layer into a soggy mess.
How to serve
Serve with raita, kachumar salad and a sweet such as zarda or kheer for an Eid table.
Storing and reheating
Keeps 2 days in the fridge and a month in the freezer. Reheat covered on low heat with a splash of water.

Mutton Biryani: questions people ask
Which cut of mutton is best for biryani?
Shoulder (dasti) and ribs on the bone, cut into medium pieces. They stay juicy through the long cooking; boneless leg meat tends to dry out.
How do I get rid of the mutton smell in biryani?
Wash the meat well, marinate it in yogurt with ginger-garlic paste, and fry it hard in the masala before adding water. Whole spices and a good bhunai take care of the rest.
