Mutton yakhni pulao is the classic Punjabi and Peshawari wedding pulao, and a natural Eid-ul-Adha dish. The long simmer of bony mutton with fennel, coriander seeds and garlic makes a stock far richer than chicken can give, and the rice soaks up all of it. Good pulao has separate, glossy grains, tender meat and a light brown colour from well-fried onion, not from any masala.
