Bhee is lotus stem, pulled from the lakes and canals of Sindh, and bhee gosht is one of the dishes Sindhi families are proudest of. The mutton is cooked first in a rich onion, tomato and yogurt masala, then the sliced bhee goes in to finish together, so it stays slightly crunchy while drinking up the gravy. It tastes best made the day before.

Sindhi Bhee Gosht: questions people ask

How do I clean lotus stem (bhee)?

Cut off both ends, peel with a vegetable peeler and slice. Rinse each slice under running water, pushing out any mud from the holes with your finger.

Can I use beef instead of mutton?

Yes. Beef needs about 30 minutes more simmering before the bhee goes in; the rest of the method is the same.
