Bun kabab is Karachi's own burger, sold from carts on every corner long before fast-food chains arrived. The patty is a soft shami-style kabab of beef and chana daal, dipped in beaten egg and fried on a big flat tawa, then stuffed into a bun with a sharp mint-yogurt chutney and raw onion. The daal makes it tender and the egg coat gives that frilly, crisp edge.
