Aloo chaat is the quickest chaat there is: boiled potatoes cut into cubes, fried until golden at the edges, and tossed while hot with tangy spices. Frying the boiled potatoes is what gives the street version its crisp outside and fluffy inside, and tossing them hot lets the masala and chutney soak in.

Aloo Chaat: questions people ask

Can I make aloo chaat without frying?

Yes. Toss plain boiled cubes with the same masala, lemon and chutney for a quick, softer chaat; it is common in home kitchens.
