The paratha roll grew out of Karachi's late-night BBQ stalls, where tikka boti was wrapped in a hot paratha so it could be eaten on the go. Boneless chicken is marinated in yogurt and tikka spices, seared hard on high heat, and rolled with two sauces: a garlicky mayo and a sharp mint-yogurt chutney. A quick coal smoke gives it the stall flavour.
