Halwa puri is the big weekend breakfast of Lahore and most Pakistani cities, normally bought in foil trays from the halwai but very doable at home for a family. It is three things on one plate: sweet sooji halwa, a spicy chickpea salan and hot puris fried to order. The trick is the order of work: soak the chickpeas the night before, cook the chanay first, then the halwa, and fry the puris last so they are still puffed when they reach the table.

Halwa Puri: questions people ask

Why don't my puris puff up?

The oil is not hot enough, the dough is too soft, or the puri was rolled unevenly. Use a firm dough, roll to an even thickness and keep the oil hot enough that a piece of dough rises at once.

Can I use canned chickpeas for halwa puri chanay?

Yes. Use two 400 g tins, rinsed, with 2 cups of water, and simmer for 15 minutes so they soak up the masala. Skip the soaking and boiling.
