Lal lobia is a winter favourite across Pakistan, cooked like a salan rather than a thin daal. The beans are boiled until creamy inside, then simmered in a properly bhuna masala so they soak up the spice. A spoon of yogurt rounds off the tomato, and a few mashed beans give the gravy body without any cream.

Lal Lobia: questions people ask

Is rajma the same as lal lobia?

Yes. In Pakistan red kidney beans are called lal lobia; rajma is the Indian name. White lobia (black-eyed beans) is a different bean.

Can I cook lal lobia without soaking?

It can in a pressure cooker, but it takes about twice as long and cooks less evenly. A quick soak in boiling water for an hour helps if you forgot.
