Sindhi kadhi is nothing like the Punjabi kind: there is no yogurt and no pakoras. Gram flour is roasted slowly in oil until it smells nutty, then whisked with water and soured with tamarind, and a mix of vegetables cooks in it until tender. Fenugreek seeds, cumin and curry leaves give it its fragrance. It is a Friday lunch staple in many Sindhi homes, eaten over rice with something fried on the side.

Method
Heat the oil in a large heavy pot on medium heat. Add the fenugreek seeds, cumin and mustard seeds and let them crackle, then add the curry leaves and green chillies for a few seconds.
Lower the heat, add the besan and roast it, stirring constantly, until it turns a shade darker and smells nutty. Do not let it burn.
⏱ 7 min
Take the pot off the heat and pour in the warm water a little at a time, whisking hard so no lumps form.
Return to the heat and add the salt, turmeric, red chilli powder, ginger and tomatoes. Bring to a boil, stirring, then simmer on low heat.
⏱ 15 min
Add the potatoes and carrots and simmer until half cooked.
⏱ 10 min
Add the aubergine and okra and simmer until all the vegetables are tender but still hold their shape.
⏱ 12 min
Stir in the tamarind pulp and simmer for 5 more minutes. The kadhi should be the thickness of single cream; add hot water if needed. Scatter the coriander and serve.

Tips for the best result
- Sindhi homes also add drumsticks (sohanjna), cluster beans (guar) or lotus stem; use whatever is in season.
- Fry the okra lightly in a little oil before adding it if you want to avoid any sliminess.
Common mistakes
- Under-roasting the besan. The whole flavour of Sindhi kadhi comes from it; pale besan tastes raw and pasty.
- Adding the tamarind with the vegetables. Acid stops potatoes softening; add it at the end.
How to serve
Serve over plain boiled rice, with fried potato slices (aloo tuk) or fried fish on the side.
Storing and reheating
Keeps 3 days in the fridge. Loosen with a little hot water when reheating. Do not freeze; the vegetables go mushy.

Sindhi Kadhi: questions people ask
What is the difference between Sindhi kadhi and Punjabi kadhi?
Sindhi kadhi uses roasted besan soured with tamarind and is full of vegetables, with no yogurt. Punjabi kadhi is made from yogurt and besan and served with pakoras.
Why is my Sindhi kadhi lumpy?
The water went in too fast or while the pot was on the heat. Take it off the flame and add warm water gradually while whisking hard.
