Fruit chaat in Pakistan is not a fruit salad: it is sweet, salty and a little peppery, with chaat masala bringing out the fruit's juice. Apples, bananas, guavas, oranges and pomegranate are the usual mix, and a short rest in the fridge lets the sugar and orange juice form a light syrup.

Fruit Chaat: questions people ask

How do I stop apples going brown in fruit chaat?

Toss the cut apples with the lemon juice straight away. The acid stops them browning for several hours.

Can I make fruit chaat the night before iftar?

Cut the firm fruit and keep it with lemon juice, but add the sugar, masala and bananas only an hour or so before serving.
