Gol gappay are hollow, paper-thin puris cracked open, stuffed with chickpeas and potato, filled with spicy-sour water and eaten in one bite. Pakistani pani is usually tamarind-based, sharp with black salt and roasted cumin. The puris are the hard part: a stiff sooji dough, rolled very thin and fried in hot oil so each one puffs into a ball.

Gol Gappay: questions people ask

Why are my gol gappay not puffing?

The dough is too soft, rolled too thick or unevenly, or the oil is not hot enough. Use a stiff sooji dough, roll it thin and fry in hot oil, pressing gently.

Is gol gappay the same as pani puri?

Yes, they are the same snack with different regional names. The Pakistani pani is usually tamarind-led and tangier than the mint-heavy Mumbai style.
