When the cold sets in, the fish stalls of Lahore's old city fill the air with ajwain and frying oil. Lahori fish is marinated twice: first with vinegar and salt to firm it up and remove any smell, then with a thick, spiced besan batter. Ajwain is the signature flavour, and the batter should cling in a thin, crisp, rust-red crust.

Lahori Fish: questions people ask

How do I remove the fishy smell before frying?

Rub the pieces with vinegar or lemon juice and salt, or with a little besan, for 15 minutes, then rinse and dry well.

Which fish is used in Lahori fish?

Freshwater rohu and thaila are traditional because they are firm and meaty. Any firm white fish with few bones works well.
